This is true. However, i've always preferred vinegar. Eastern NC Vinegar > SC Mustard > Tomato > Chocolate.

There are good and bad varieties, except Chocolate...that's all bad and should never have been "invented", in each of those like Memphis > Tennessee. I left off the white sauce from Alabama b/c I haven't had it. But something tells me that mayonnaise, vinegar, and pepper could go either way. No homo.

Yeah, as our resident Alabamian: white sauce isn't for pork. It's for chicken.

And, Alabama and Memphis are more about dry rub ribs than pulled pork.
