Most bars I know have one installed somewhere behind the bar and servers/bartenders use it as part of their cleanup duties at the end of the shift or closing.
Garbage disposals are illegal in NYC. The waste disposal union doesn't want them in homes and restaurants because it would mean less garbage for them to collect.
It's an infrastructure issue.
They're legal in residential homes, but they're still mostly found in new construction. New York's sewage system can handle residential demand, but often the piping in older buildings still can't.
