When using photoshop to alter the colors, how do you do it? Every time I try to change a color it changes everything to that color!

Right click on a layer, go to Layer Properties, and select color overlay.

EDIT:
I think I may know what you are doing wrong without even seeing it. With the template I linked to, when you open it up in Photoshop, it should have 4 layer groups. Blocking...etc. Click on the little right facing triangle to the left of the layer title. That'll drop down the layers in that group. Then you can edit each one.
