Barbecue is too damn vast to paint broad strokes like this Iowegian is trying to do.

But, just looking at ribs - Memphis style dry rub beats a slathered sauce every damn time for me.

Kansas City is the Olympus of barbeque. Memphis dry rubs, the various Carolina styles, Alabama white, even that stuff they do to beef in Texas all has its place and can be very, very good. Everyone should eat what they like.

MAQA - putting the Q into qrazy qanon qult qonspiracy theories since 2015.

It will probably be difficult for MAQA yahoos to overcome the Qult programming but they should give being rational & reasonable a try.

Totally. A little crusty and dry exterior that still pulls off the bone tender is the sweet spot.

Add what you want after that. Vinegar, mustard, or huckleberry are nice add ones for me.

I still need to try my hand at smoked Dungeness and oysters. Supposed to be great.

Just to be clear-

When I say barbecue I am not referring to ribs (of any kind), beef, or that sheep crap in Kentucky

I love Texas “barbecue” as well as Memphis ribs

But when I say barbecue I am referring to two things:

Eastern style NC pulled pork

Lexington style NC pulled pork

All else is “barbecue”

So the difference is in the quotation marks? When you are in person, do you use "air quotes"

“Barbecue” denotes anything that is called barbecue without actually being barbecue

Sort of like klam is a “moderate” or JSO is “concise”

Went to a party at a friends house here in STL. I asked if there was anything I could bring. He said that he was getting barbecue. Naturally, I was thinking of a pan of pulled or chopped pork. So I asked if he had enough rolls. He was baffled. "There's no need for rolls with ribs and chicken", he said. "We just eat it off the bone."

Um....

But....

Uh...

Well, OK.

"Barbecue/Barbeque/BBQ" in the midwest covers pulled pork, pulled chicken, all ribs, brisket, burnt ends, etc. So you never know what you are getting.

Most of my life, BBQ was a round thing with legs that you put Kingsford Charcoal in and doused with lighter fluid.

Smoked meat is a different thing.

Sauce shouldn't be necessary unless you're trying to help out an inferior piece of meat

Barbecue is smoked meat. It does not refer solely to pulled pork.

Your opinion is as wrong as the Iowegian's "KC Olympus" opinion.
