Kansas City is the Olympus of barbeque. Memphis dry rubs, the various Carolina styles, Alabama white, even that stuff they do to beef in Texas all has its place and can be very, very good. Just to be clear-
When I say barbecue I am not referring to ribs (of any kind), beef, or that sheep crap in Kentucky
I love Texas “barbecue” as well as Memphis ribs
But when I say barbecue I am referring to two things:
Eastern style NC pulled pork
Lexington style NC pulled pork
All else is “barbecue”

Went to a party at a friends house here in STL. I asked if there was anything I could bring. He said that he was getting barbecue. Naturally, I was thinking of a pan of pulled or chopped pork. Most of my life, BBQ was a round thing with legs that you put Kingsford Charcoal in and doused with lighter fluid.
Smoked meat is a different thing.
