Go look in the other BBQ threads, I can't speak highly enough of Scott's. And that was before he got famous. But since then, and since he's opened the restaurant in Charleston, the quality of his BBQ has gone down hill some. It's still delicious but the last 2x i've had his BBQ, it hasn't been his best. Even on his worst day, Rodney is better than most others out there.


I'd also submit Red Bridges BBQ in Shelby, NC. :thumb:

I was born in the Olympus (Kansas City) of barbeque, have eaten at Zeus' (Arthur Bryant's) table and I spent 19 years living in the top pork producing state in the nation so I know and love good barbeque. Now I live in Oregon where good barbeque is hard but not impossible to find.

Carolina barbeque has its place but comparing it to Kansas City barbeque is like comparing skirt steak a to ribeye.
When I was in KC over the summer for Softball, we ate at Aruthur Bryant's. Wasn't impressed. We ate Barbeque most nights, and every other place we ate at was better.

Unfortunately, I haven't been to KC or Bryants in long time. I've heard that it had slipped a little but that happens when you expand and the namesake passes on.

Arthur Bryant was making great barbeque back when most of the owners of the "top" restaurants weren't even a gleam in their father's eye. Like Fritz Maytag (Anchor Steam) did for craft brewing, he kept the flame burning for good barbeque. In 1974, Playboy called Arthur Bryant's "possibly the single best restaurant in the world."

The best barbeque is is probably found in backwoods joints south and east of Kansas City in the Ozarks.

Disagree. There's a reason vinegar is in just about any barbecue sauce you'll ever have, whether it be Carolina, Memphis, Kansas City, Texas.... I've never seen one that doesn't have vinegar in it.

1 cup white vinegar
1 cup cider vinegar
1 tablespoon brown sugar
1 tablespoon cayenne pepper
1 tablespoon hot pepper sauce
1 teaspoon salt
1 teaspoon ground black pepper

vs.

3 cups ketchup
1/2 cup sugar (brown)
1/2 cup onion (finely minced)
2 cloves garlic (finely minced)
1/2 cup apple cider vinegar
1/4 cup mustard (brown)
2 tbsp Worcestershire sauce
2 tbsp soy sauce
1 tsp hot sauce

Nothing I said was incorrect. When I go to a barbecue joint I try every type of sauce they have (not talking about a place that has 47 different bottled red sauces) on each type of meat. I do pulled pork a couple times a month and I always put red, yeller and vinegar sauces on the table. Guess I'm just more open to trying different things.

“Sauce” is thick and it covers up the flavor of the meat... like ketchup

Vinegar with some heat and sugar is nit a sauce. It is seasoning that cuts the fat without covering up the meat

If you put “sauce” on any meat it means its either inferior meat or you fucked it up in the cooking
